Growing up in Brooklyn and later moving to Las Vegas, Vic learned classic Italian and comfort cooking from his mother and grandmother, then infused those traditions with the energy and flair of Vegas kitchens. With over two decades in the industry, Vic has led high-volume operations for major hotels, launched his own restaurant concepts, and built a strong presence on TV through Next Food Network Star, Chopped, Bar Rescue, and more. He is also the host Talk and Chew, a podcast that brings together food, culture, and conversation from the perspective of a working chef and the people he has met along his journey. Today, Vic helps restaurants and bars refine menus, streamline operations, and deliver experiences that truly connect with guests, while never forgetting the lessons of his famiglia and the flavors of home.

Within six months, she advanced from bartender to General Manager of a landmark family restaurant. Since then, Irene has helped launch and grow multiple restaurant concepts, building a reputation for streamlining operations, reducing costs, and leading teams to deliver exceptional guest experiences. For Irene, true success is measured not only in business growth but also in the joy of bringing people together. A natural connector, she uses her network to unite people with shared passions, strengthening both community and business.

Israel has a lifetime of experience and deep-rooted knowledge of the restaurant industry. Born into a family business, he learned the ins and outs of running a successful restaurant from his parents. After earning a Bachelor’s degree in Business from the University of California, Riverside, Israel took the reins of the family owned restaurant, which has been a beloved community institution since 1959 and a frequent destination for both locals and celebrities. A master of health codes and compliance, Israel ensures that every aspect of the restaurant operates smoothly, safely, and efficiently. His expertise in operations, combined with a profound respect for tradition and community, allows him to maintain the restaurant’s longstanding reputation while keeping it innovative and relevant. Israel’s commitment to excellence, attention to detail, and understanding of the business from the ground up make him a trusted authority in restaurant management.
Hekili Apao

Hekili Apao is a seasoned chef, educator, and consultant whose career spans fine dining, corporate kitchens, and higher education. A UNLV alumnus with three hospitality degrees and a Certified Executive Chef credential, he has opened restaurants ahead of schedule, improved operational performance at national brands, and shaped future talent as a Chef Instructor at UNLV. From leading Blu Bar and Grill in Bermuda to elevating standards at Maggiano’s and mentoring through Chefs for Kids, Hekili’s journey reflects resilience, mentorship, and a passion for helping restaurants thrive. Today, he partners with operators to streamline systems, optimize costs, and design menus that inspire. At the heart of it all, Hekili is devoted to his ʻohana, his wife Amanda and their three children.

She also holds a Microsoft MCSE certification, reflecting her deep expertise in technology and systems. Over the past 8 years, Debbie has specialized in the restaurant industry, managing all aspects of accounting, payroll, and financial operations for a wide range of establishments. She is highly skilled in QuickBooks, all Microsoft programs and other accounting software, providing business owners with clear insights and reliable financial guidance. Debbie has a knack for uncovering savings, if there’s a way to reduce costs or optimize spending, she will find it, earning her a reputation as a trusted steward of business resources. Known for her meticulous attention to detail and commitment to service, she combines technical expertise with a genuine passion for helping people and businesses succeed.
